การวิจัยครั้งนี้ เป็นการพัฒนานวัตกรรมเพื่อถ่ายทอดเทคโนโลยีสู่ชุมชนฐานราก ในการแปรรูปทุเรียนแท่ง โดยประยุกต์เทคนิคการกระจายหน้าที่เชิงคุณภาพ (QFD) เพื่อเป็นแนวทางในการออกแบบและพัฒนาเครื่องแปรรูปเนื้อทุเรียนแบบแท่งดันแบบ ที่สามารถตอบสนองความต้องการของชุมชนเกษตร การดำเนินงานวิจัยเริ่มต้นด้วยการศึกษา และรวบรวมข้อมูลที่เกี่ยวข้องของกระบวนการผลิตทุเรียนแปรรูปแท่งทอดกรอบ หลังจากนั้นทำการสำรวจและเก็บรวบรวมข้อมูลความต้องการของชุมชน ผลจากแบบสำรวจได้นำเป็นข้อมูลความต้องการของชุมชน และประยุกต์
ใช้เทคนิคการกระจายหน้าที่เชิงคุณภาพ เพื่อกำหนดคุณสมบัติเชิงเทคนิคของเครื่องแปรรูปทุเรียนแท่งต้นแบบ ในขั้นตอนต่อมาเป็นการออกแบบเครื่องได้ดำเนินการโดยสร้างเป็นแนวความคิดสรุปได้ 4 แบบ แล้วทำการเลือกแบบที่เหมาะสมที่สุด ปัจจัยในการคัดเลือกแบบนั้นได้ใช้ความต้องการเชิงเทคนิคจากบ้านคุณภาพมาเกณฑ์ประเมิน เมื่อได้แบบแนวความคิดที่เลือกแล้วจึงทำการออกแบบรายละเอียดของเครื่อง เพื่อที่ใช้เป็นแบบและวางแผนในการสร้างเครื่องแปรรูปทุเรียนแท่งต้นแบบ หลังจากนั้นจึงทำการสร้างและทดลอง ปรับปรุง แก้ไข จนเครื่องสามารถทำงานได้ แล้วทำการประเมินการทำงานของเครื่อง ผลที่ได้เครื่องสามารถทำงานได้ตามข้อกำหนดในการออกแบบได้ดี ในขั้นตอนสุดท้ายนำเครื่องไปทดสอบใช้งานจริงและถ่ายทอดความรู้ให้กับกลุ่มชุมชนเกษตรกร และทำการประเมินความพึงพอใจผลที่ได้อยู่ในเกณฑ์ดี |

This research is the development of innovation for transferring technology to rural community for the durian bar processing. The research applied Quality function deployment (QFD) in order to design and develop the conceptual model of a machine for processing durian bar that respond to the truly needs of the agricultural community. The research began with studying and collecting data of the fried durian bar processes. The survey of the agriculturist needs to the durian bar processing machine was then performed. The needs were analyzed applying QFD to establish the technical specifications of the machine. The research then generated 4 alternative conceptual models of the fired durian bar machines and selected the beat appropriated one. A prototype of the machine was developed, tested and improved in order to work as intend. The fried durian bar machine developed in this research was used in real environment and transferred knowledge to the rural community in which the agriculturists were satisfied with the machine usage. |
