กาแลคโตแมนแนน เป็นสารคาร์โบไฮเดรตชนิดหนึ่ง ที่พบได้จากเมล็ดของพืชตระกูลถั่ว (Legume plants) โดยกาแลคโตแมนแนน จะถูกนำไปใช้อย่างกว้างขวางในอุตสาหกรรมชนิดต่าง ๆ กัน โดยเป็นสารเติมแต่งในผลิตภัณฑ์ต่าง ๆ เนื่องจากคุณสมบัติเฉพาะตัวของกาแลคโตแมนแนน เช่น เพิ่มความหนืด การเกิดเจล เพิ่มความคงตัวให้ผลิตภัณฑ์ เป็นต้น สำหรับโครงการวิจัยนี้ เมล็ดพืชชนิดต่าง ๆ ได้แก่ มะขาม ราชพฤกษ์ หางนกยูงฝรั่ง และหางนกยูงไทย ซึ่งเป็นพืชที่อยู่ในตระกูลถั่วดังกล่าว ได้ถูกนำมาเป็นตัวอย่าง เพื่อใช้ในการสกัดกาแลคโตแมนแนนออกจากเมล็ด ด้วยวิธีการตกตะกอนกาแลคโตแมนแนนด้วยสารละลายไอโซโพรพิวแอลกอฮอล์ จากผลการทดลอง วิฑีดังกล่าวมีความเหมาะสม และให้ผลดี กับเมล็ดมะขามมากที่สุด เนื่องจากมีผลิตผลของกาแลคโตแมนแนนสกัดสูงถึง 67 เปอร์เซ็นต์ ในขณะที่ เมล็ดราชพฤกษ์นั้น ได้กาแลคโตแมนแนนสกัดเพียง 36 เปอร์เซ็นต์ และเมล็ดหางนกยูงฝรั่ง ได้กาแลคโตแมนแนนสกัดเพียง 38 เปอร์เซ็นต์ และพบว่า วิธีที่ใช้ในการทดลองในครั้งนี้ ไม่มีความเหมาะสมกับเมล็ดของหางนกยูงไทย โดยการทำงานวิจัยในครั้งนี้ ข้อมูลที่ได้ถือว่ามีประโยชน์อย่างยิ่ง ที่จะใช้เป็นข้อมูลพื้นฐาน เพื่อนำไปใช้ในการพัฒนาสำหรับงานวิจัยต่อเนื่องไป |

Galactomannans are neutral polysaccharides and found in endosperm of legume seeds. They are used in many kinds of industries as thickening agents, gelling agents, stabilizers, etc. This work is to study the extraction and purification for the galactomannan from legume seeds as Tamarindus indica L., Cassia fistula, Cassia pulcherrima, and Delonix regia. The precipitation by isopropyl alcohol in purification process was used in this work. The results showed that the purified galactomannan yeilds of 67%, 36%, and 38% were obtained for Tamarindus indica L., Cassia fistula, Cassia pulcherrima, respectively. Whereas this extraction and purification processes were not suitable for Delonix regia. Nevertheless, these results from this work are useful information for further relative researches |
