| dc.description.abstract | ในปัจจุบันการขับเคลื่อนเศรษฐกิจดิจิตัล มุ่งเน้นการประยุกต์ใช้ระบบเทคโนโลยีสารสนเทศมาช่วยใน การเพิ่มประสิทธิภาพ ลดต้นทุนในการผลิต และเพิ่มขีดความสามารถในการแข่งขันของผู้ประกอบการ โครงการวิจัยนี้ เป็นการพัฒนาระบบช่วยในการตัดสินใจ เพื่อช่วยในการบริหารจัดการระบบครัวและ การจัดการสินค้าคงคลัง สำหรับงานในครัว มุ่งเน้นการพัฒนาในการประยุกต์ใช้งานจริง อาศัยหลักการจัดการโซ่ อุปทานในร้านอาหารที่มีประสิทธิภาพ 3 ด้าน ได้แก่ ความสามารถในการบริหารจัดการและเข้าถึงข้อมูลในทุก ๆ กิจกรรมของโซ่อุปทานแบบเรียลไทม์ ความสามารถในการเชื่อมโยงระบบต่าง ๆ เข้าหากันได้ระหว่าง ระดับชั้นต่าง ๆ ในโซ่อุปทาน และความสามารถของระบบช่วยในการตัดสินใจในกระบวนการต่าง ๆ โดยมี วัตถุประสงค์เพื่อลดระยะเวลารอคอยโดยรวมของลูกค้า เพิ่มความต่อเนื่อง ในการรับประทานอาหาร ลดต้นทุน และระยะเวลาในการทำอาหาร สู่เป้าหมายเพื่อให้ได้อาหารที่มีคุณภาพและราคาประหยัด การดำเนินโครงการระบบจัดลำดับงานและติดตามวัตถุดิบคงคลังในครัว โดยใช้ระบบเมนูอาหาร อิเล็กทรอนิกส์ แบ่งการทำงานออกเป็น 3 ระบบหลัก ๆ ระบบเมนูอาหารอิเล็กทรอนิกส์และการจัดการภายในครัว ระบบจัดการวัตถุดิบคงคลัง และระบบจัดการและควบคุมการบริหารวัตถุดิบจากศูนย์กลาง ทั้ง 3 ระบบมีความเชื่อมโยงกันจัดเก็บและประมวลผลข้อมูลผ่านบริการกลุ่มเมฆ (Cloud) และผ่านโมบายแอปพลิเคชัน หลังจากการพัฒนาพบว่า มีทั้งผู้ประกอบการที่สนใจให้การตอบรับอย่างดี และใช้งานระบบอย่าง ต่อเนื่อง และผู้ที่สนใจแต่ไม่พร้อมใช้งานระบบ เนื่องด้วยปัจจัยในด้านต่าง ๆ ไม่ว่าจะเป็นด้านความถนัดความ เคยชิน หรือ ปัจจัยด้านเศรษฐกิจ อย่างไรก็ตาม การพัฒนาระบบจะเป็นไปอย่างต่อเนื่อง เพื่อเพิ่ม ความสามารถของระบบ และเป็นแอปพลิเคชันที่สามารถใช้งานได้จริงในภาคธุรกิจ | th_TH |

| dc.description.abstractalternative | At present, the key drivers for digital economy focus on the application of information technology to increase the efficiency, to reduce production costs and to enhance the competitiveness of the business. This research is to develop the decision support system to help managing the kitchen operations and inventory for restaurant. For kitchen operations rely on the supply chain management composing of three areas: first of all, the capability in day-to-day management and the real-time accessibility of the information in every supply chain activities. Secondly, the capability in integrating in all operation levels, and thirdly, the capability of decision support system in all decision-making processes. The objectives are to decrease customer’s waiting time, to increase the dining continuity, and to reduce the food cost and the time for cooking process leading to quality food at low price. In this research project to improve the kitchen operations and inventory cost for restaurant by using electronic menu system classifying the restaurant operations into three main systems: the electronic menu and kitchen operations system, inventory management system, and centralized control system for restaurant inventory. These systems are connected, the data is stored and process via cloud and mobile applications. The results of the research have shown that there are both restaurant owners that accepts the system and use it continuously, and the interested users but not ready to use the system. This is due to the information technology skill and the economic factor.
